From mise en place to digestif: how an evening unfolds in a DOMA residence.
We work with a discreet roster of chefs, most of them former sous chefs of starred kitchens in the valley. An evening begins with a conversation forty-eight hours ahead — preferences, allergies, the wine cellar. The chef arrives at four; the kitchen is theirs until midnight.
